Here’s a simple, vibrant, and delicious raw and living recipe — marinated button mushrooms that you can enjoy as they are, or served with zucchini noodles.
With their high water content and low calories, mushrooms are nutritionally comparable to many vegetables. They also contain beneficial compounds such as:

Ingredients and Procedure (Serves 5)
– 500 g button mushrooms
– 2 tbsp tamari
– 1 tbsp honey
– A pinch of chili powder (to taste)
– 1 large garlic clove
– 1 shallot
– 1 handful fresh parsley
– The juice of 1 large orange
- Mix together the orange juice, tamari, honey, chili, garlic, shallot, and chopped parsley to make the marinade ;
- Finely slice your mushrooms and combine them with the marinade ;
- Let sit for half a day or overnight in the refrigerator to absorb all the flavors ;
- Serve with zucchini noodles, add them to your salad, or enjoy them just as they are — full of raw vitality !
