Ingredients and Procedure (Serves 5)
– 4 large carrots
– 1 apple
– The juice of 1 orange
– 2 handfuls of walnuts
– 2 handfuls of raisins
– 5 Medjool dates
– 2 tbsp coconut oil
– 2 tbsp shredded coconut
– 2 tsp cinnamon
– 1 tsp nutmeg
– 1 tsp cardamom
– 1 tsp grated ginger      
For the Frosting:
– 3 handfuls of raw cashews
– 3 tbsp solid coconut oil
– The juice of 2 lemons
– 2 Medjool dates 
- Melt the coconut oil gently in a hot-water bath ;
- Roughly chop the carrots, then place them in a food processor (S-blade) along with the melted coconut oil and all the other ingredients (except the frosting ones), Blend until you obtain a smooth, even mixture ;
- Spread the mixture into a mold and place it in the freezer for 1 hour to set ;
- For the frosting, blend all frosting ingredients until creamy, then pour over the cake and return it to the freezer for 10 minutes ;
- Finish by grating a bit of orange zest, lemon zest, and fresh ginger on top — and enjoy !
